Hey guys! Happy weekend, if that still means anything! Today I’m sharing a recipe for Flourless Chocolate Peanut Butter Cookies because I know flour is rarely on the shelves these days. Cookie cravings, on the other hand, pretty much always around. I hope you are all holding up and maybe feeling a bit less restless these days- baking helps!
These cookies are soft and chewy, and super flavorful. Plus, they come together quickly and the recipe makes just 9 cookies, perfect for your little household!
I’m even running out of flour over here, and I was gifted a 50 pound bag right before all this happened. Alright, I bake a lot, but still! Honestly, it doesn’t even taste like a flourless recipe, they just taste like really great cookies. Let’s get to it!
How to Make Flourless Chocolate Peanut Butter Cookies
These cookies come together quickly, in just a few steps. Let’s start by talking about the peanut butter- I’m using a natural peanut butter here, but this recipe works well with natural or regular, and you can actually do it with crunchy peanut butter as well. I just usually have smooth, so that’s what I’m going with here. Start by mixing together your creamy peanut butter, sugar, and brown sugar until combined. Then, add in the egg yolk, vanilla, cocoa powder, baking soda, and salt. Beat until it’s fully combined.
Then, scoop the cookies into 2-tablespoon-fulls onto your preparing baking sheet. You’ll want to press the dough down just slightly. Then, sprinkle coarse sugar over the tops. You could even do a light sprinkle of coarse salt if you want something sweet and salty instead!
Bake these babies for 7-9 minutes, or until they are puffy and set. Cool on a wire rack until completely cool, and enjoy! They will be thick and chewy- perfect peanut butter cookies with a little bit of chocolate too! Enjoy!
Flourless Chocolate Peanut Butter Cookies
Ingredients
- 1/2 cup creamy peanut butter
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1 egg yolk
- 1/2 tsp. vanilla extract
- 1 tbs. dark cocoa powder
- 1/4 tsp. baking soda
- 1/8 tsp. salt
- 1 tbs. coarse sugar for sprinkling
Instructions

Preheat your oven to 350 degrees, and line a baking sheet with parchment paper. Set aside.

In a large bowl, beat together the peanut butter, sugar, and brown sugar until combined. Add in the egg yolk, vanilla extract, cocoa powder, baking soda, and salt. Beat until combined.

Scoop your cookie dough onto the baking sheet with each cookie dough ball about 2-tablespoons in size. Press the dough down just slightly, and sprinkle on the coarse sugar.

Bake for 7-9 minutes, or until puffy and set. Cool completely on a wire rack. Enjoy!
