Hey guys! I’m making blondies today stuffed with chopped up Reese’s cups, and it’s a real weekend game changer. I LOVE blondies, and you can really add anything to them and they’re going to be amazing.
This time I’m using some peanut butter powder to give it an extra boost of pb flavor, and I chopped up some peanut butter cups to fold in. If you love Reeses, this is the dessert for you! Let’s get to it!
How to Make PB Cup Blondies
This recipe is super simple, and you can mix the whole thing by hand. Start by stirring together the melted butter, sugar, and brown sugar until just combined. Then stir in the eggs, milk, and vanilla extract, and finally the dry mixture.
I’m using powdered peanut butter in this recipe for a few reasons- first is that it doesn’t interfere with the texture, but it still gives us a boost of peanut butter flavor. Plus, it’s easy to buy now, and you can easily find it in grocery stores near your normal peanut butter jars- it’s a perfect baking option!
You can use any kind of peanut butter cup you prefer, but I’m going for some full-size Reese’s that I’ve chopped up into smaller chunks, and then folded through the batter. Then it’s off to the oven! These will get a shiny crackly top and they stay super fudgy and chewy on the inside.
And that’s it- all mixed by hand, super simple, but it packs really big flavor. Seriously, I could eat the whole pan of these guys, give em a try!
Tips & Tricks For Peanut Butter Blondies
These come together quick and easy, but here are a few tips to help you along the way:
- Use the powdered peanut butter and you actually can’t substitute normal peanut butter in this recipe. You can omit the powdered peanut butter though, and replace it with 3 tbs. of flour if needed.
- Use any pb cups you like! You can use mini cups, or another brand, or anything you like here. Just be sure to chop them up to smaller pieces, and you’re good to go.
- Add other mix-ins if you want. You can toss in some chopped peanuts, some chopped pretzels, or chocolate chips. No wrong moves here!
- I’m at about 5,000 ft above sea level and I find that most people who live between 3,000 ft and 7,000 ft above sea level do not need to make any adjustments to my recipes.
Enjoy!
Peanut Butter Cup Blondies
Ingredients
- 1 cup melted butter
- 1 cup dark brown sugar
- 1 cup sugar
- 2 eggs
- 1/3 cup milk
- 2 tsp vanilla extract
- 2 1/2 cup flour
- 1/4 cup powdered peanut butter
- 1 tsp. salt
- 10 full size Reese’s cups roughly chopped (about 1 1/2 cups)
Instructions
-
Preheat the oven to 350 degrees, and generously grease a 9×13 inch pan. Set aside.
-
In a large bowl, whisk together the melted butter, brown sugar, and regular sugar until smooth. Whisk in the eggs, milk, and vanilla extract until the mixture is smooth. Add the flour, peanut butter powder, and salt to the mixture, and stir until combined. Gently stir in the chopped Reese’s, working quickly because the batter will be starting to thicken as the butter comes back to room temperature.
-
Spread evenly in your prepared pan. Bake for 28-30 minutes, or until a toothpick inserting about 2 inches from the edge of the pan comes out clean. Cool completely, slice, and serve!
